William & Aisling O’Callaghan of Longueville House are delighted to announce the arrival to the market of an artisan/ craft Irish Cider made at their award winning Country House Hotel and sporting estate in Mallow, Co Cork.
Longueville House is no stranger to brewing or distillation as Cider and Apple Brandy production was first developed there by the late Michael O’Callaghan, William’s father in 2000.
A pioneering spirit he planted 20 acres of Dabinett and Michelin cider apples at the north-west side of the property.
More recently William has taken over from where his father left off and had brought the cider production to another level.
(He also continues annually to distil Ireland’s only Vintage Apple Brandy which is 40° strength and is sold in 50cl bottles.)
The apples are harvested in the autumn every year. Once picked the apples are crushed and pressed in a cider press located in the cider house on our farm. The pressed juice is naturally fermented over time, resulting in a rich amber coloured cider. The cider is then filtered, lightly carbonated and pasteurised.
There are no colourings, additives or preservatives used at any stage during the production and manufacturing process of the cider. The cider strength is 5°.
It is then bottled in 500ml brown glass and sold as Longueville House Cider. Longueville House Cider is a medium-dry, fresh tasting, natural thirst quenching drink and is best enjoyed served chilled, no ice required.
