The Mustard Seed Celebrates 25 years in business

Ireland's Blue Book is delighted to congratulate Dan Mullane and The Mustard Seed on 25 years in Business.

25 years ago in an era when fine dining was in its infancy and gourmet restaurants were thin on the ground, The Mustard Seed opened its doors in a cute cottage in the centre of Adare village. Armed with a mis-match of delft and cutlery, and an eagerness to bring the ‘dining out’ experience to a higher level, Dan began with a 30 seater dining room. It wasn’t long before this charming cottage became the most sought after restaurant in the region.

Eleven years of satisfied customers brought the first stage of The Mustard Seed to fruition.

Dan’s love of the countryside and his passion for gardening forced him to make the brave decision to relocate his restaurant to the nearby village of Ballingarry where he found the perfect home, a former convent, build in 1884, standing on 7 acres. Having spent some months revising, renovating and redecorating, Dan revealed his latest venture to the world, a stylish country house complete with twelve unique guest bedrooms and of course his famous restaurant. Along with these came the restoration of the former garden. It has now become a stunning display of vegetables, herbs and flowers all of which are organically grown and used in the kitchen.

From small beginnings in Adare, with 5 staff members, a basic herb garden and lots of good will, the Mustard Seed has grown and flourished to a four star country house of style and elegance with 18 luxury bedroom, and 12 acres of pleasure grounds.

Dan’s definition of good food is ‘classic simplicity’. He relies on good quality, natural ingredients to give the predominant flavour to his dishes and chooses the accompaniments carefully so that the real taste of the food is not smothered by conflicting, overpowering flavours.

Dan’s enthusiasm for the restaurant business is still ignited. Each evening, he meets, greets, serves and pleases his customers going to great lengths to ensure that each and every guest enjoys their evening. The Mustard Seed has stood the test of time and guests come from all over the globe to enjoy the delights. Surely an enormous achievement – 25 decades of fine dining.
