    Whatever level you're at, the Tannery Cookery school has the perfect course for yor abilities. Taught by world renowned chef, Paul Flynn, courses range from everything from how to prepare for a lavish dinner party, to practical cooking for the everyday.

    May 4th: A Simple Dinner Party
     
    Learn how to cook the perfect dishes for a simple dinner party at home. Whether it's an informal supper with friends or a more formal evening where the best linen and glassware is pulled out for the occasion. This morning demo is a very enjoyable entry into the world of cookery courses. Followed by lunch it's the ideal get-together with friends or a sociable morning on your own.

    May 18th: Summer Food for Friends - Practical
     
    The long summer evenings are upon us and what could be nicer than to have friends over for dinner. This course will provide you with the inspiration and the courage to do it yourself. Dishes for sharing, for families and for having fuss free entertaining. Followed by a convivial lunch you will go home armed with dishes to see you through the summer and beyond.

    June 1st: Italian Food to Share with Friends and Family - Morning Demo
     
    Who doesn’t love Italian food. The Italian dinner table embodies the essence of hospitality and the spirit of sharing. This morning demo covers some Italian classics and some not so classic. Recipes that can be adapted for dinner, lunch or entertaining. Followed by lunch.

    September 7th: Hearty Wholesome Family Cooking - All Day Demo
     
    For those who feel they are stuck in a cooking rut, repeating the same recipes over and over and need some new inspiration for family cooking at home. Getting the balance right between what the kids like and what the adults want is always tricky. This course will demonstrate tray bakes, slow cooked casseroles, a beef rib Sunday lunch and the perfect dauphinoise potatoes that the whoel family will love.

    September 30th - October 2nd: 3 Day Intensive 2019
     
    An annual three day intensive course where Paul guides you through various disciplines of cooking in an intimate setting. This course is not for a beginner, but for the competent home cook who wants to further their skills. It may also be of interest to those who might want to take their cooking out of the home kitchen and into a more commercial area, such as small café. Paul will focus on how to make the best of seasonal ingredients. How to elevate simple dishes to make them restaurant quality. Secrets of the professional kitchen will be shared along with the recipes that can be adapted for home. Special Rates in the Tannery Townhouse for participants on this course.

    October 5th: Kitchen Confidential - The Insider Knowledge - Practical
     
    Learn the tricks that make a restaurant kithen work and in doing that impress your friends with your insider knowledge. This one day practical course with Paul will be an inspiring day of cooking for those who are already good home cooks and want to improve their skills.

    October 19th: Aga Demo 2019
     
    The perennial favourite Aga – October is here and its time to crank up those Agas. This course is one of the most popular at the Tannery Cookery School every year. Helen Manning is now a familiar face at the school as she assists Paul in the finer points of Aga cooking. From hearty stews and casseroles to baking and slow cooking, this is the course that shows you how to make the most of your Aga. Followed by lunch.

    November 9th: Cooking for Christmas - Morning Demo
     
    Cooking for Christmas doesn’t just mean the traditional roast turkey. Why not shake things up a bit with this cookery course to make sure your Christmas spread is the envy of all your friends and family over the festive season. Learn how to cook Paul’s favourite seasonal recipes, perfect for entertaining and also for your own family. Followed by lunch.

  • Apple Orchard Blossom Walk
    at Longueville House

    Longueville House will host their annual Orchard Blossom Walk on Sunday the 19th of May, to coincide with the blossoming of the apple trees in Longueville’s extensive orchards.

    The event includes a leisurely walk around the estate’s orchards and a tour of the cider house, with the guidance of owner William O’Callaghan and Longueville’s Master Brandy Distiller and Cider Maker, Dan Duggan. Afterwards the team will prepare a special lunch for participants with seasonal produce and ingredients grown in the estate’s own kitchen garden.

    Did you know that Ballymaloe always uses fresh, local flowers for their arrangements? Most arrangement even come from the grounds and garden at Ballymaloe. On 23rd of May, learn the delicate art of floral design with Ballymaloe's florist, Iona. Along with the warm summer air, comes fresh, vibrant flowers. You’re invited to start off your day with a light tea and coffee, followed by a stroll through the property. Throughout the walk, hear about the seasonal flowers and the planning that goes into the gardens, that allows Iona to create her arrangements. Then, return back to the house and enjoy lunch together among the beautiful décor of the conservatory.  During her course, Iona will share her expertise on the types of flowers and foliage at this time of year. She’ll describe the techniques she uses, her choice of vase selection and proportions, use of colour and structure of the arrangements and suitability of location for the arrangements in the house.

    This event is priced at €120 per person and takes place from 9:30am to 5pm.

  • Opera in the Garden

    On the 5th anf 6th of June, the Merrion Hotel welcome the world-renowned Wexford Opera Company to perform one of their ShortWork operas against the backdrop of The Merrion's beautiful gardens.

    This year's performance is a comic operette called Le Docteur Miracle by French composer George Bizet. The evening will commence with a champagne reception on the terrace, followed by the performance and a private dinner in the Georgian Salons in The Merrion.
