Summer Wine Soirée at Brabazon

Tankardstown, in association with Febvre Wines, presented guests with a very special evening of fine wine and dining at the recent Summer Wine Soirée held in Brabazon Restaurant.

Guests enjoyed a delicious Tasting Menu strongly influenced by flavours of the Rhone Valley Cuisine, carefully crafted by Head Chef Adrian Cassidy. Each course was paired with wines specially selected by Hervé Roberts, Director of Delas Wines. The exquisite and extensive array of Delas wines on the night were sponsored by Febvre Wines.
Guests were welcomed with a glass of Champagne Deutz Brut Classic N.V, a unique and delightful blend of Pinot Noir, Chardonnay and Pinot Meunier. Guests mingled outdoors on the terrace, enjoying the early evening’s sunshine.

Guests were seated and Hervé stepped up as host of the evening, giving a bit of background on the Champagne just enjoyed, to the Rosé and White wine which was being poured for them by Maître D’ Derek and his front of house team. With wonderful aromas emanating from the open pass of the kitchen, diners welcomed the first course of the evening, Charcuterie and homemade Bread and Butter. Followed closely by ‘Fromage de Tête’, paired with Côtes du Rhone St. Esprit Rosé 2014, Delas Freres.

The next course was Asparagus & Egg, paired with Côtes du Rhone St. Esprit Blanc 2015, Delas Freres, a fresh white with aromas of white flowers and exotic and citrus fruit.
With no less than 8 glasses per setting, Derek and his team were kept busy pouring, this time with two red wines, which were again introduced and discussed by Hervé.
The first red was a beautiful deep coloured Côtes du Rhone St. Esprit Rouge 2015, Delas Freres, which was accompanied by Chefs take on the French dish Bouillabaisse.

Keeping with red wines, the next course, which was a favourite of the night, Coq au Vin with Spätzle Dumplings, was paired with Crozes Hermitage Les Launes 2015, Delas Freres. Both the sweet and spicy flavours of the Coq au Vin, and the strong aromas of blackcurrant, plums and a touch of violets in the well-rounded wine, complimented each other beautifully.

A summer Rhone style French evening would not be complete without some delicious cheese and a fine wine, and that’s what was next on the menu. The Cheese course consisted of a homemade parmesan cracker, topped with Goats Cheese, Rhubarb Jam made with Tankardstown’s own rhubarb from the garden, and a nasturtium leave also from the kitchen garden. This course was very well received by diners, who enjoyed an accompanying glass of Crozes Hermitage Grand Chemins 2013, Delas Freres.

Last but not least, dessert and accompanying dessert wine was served to contented guests. Garden Strawberries & Cream, and the deliciously elegant Muscat de Beaumes de Venise 2015, Delas Freres. The chosen wine was the perfect fruity and lemon-tinged finish to a perfect evening.
