Taste of the Estate Dinner at Tankardstown

On Thursday evening, 21st July, Tankardstown held its successful ‘Taste of the Estate Dinner’ as part of the Boyne Valley Food Series 2016.

In its second year running, the event proved very popular with a high demand for tickets and a sell out within weeks of it announcement. Being Home to Leinster’s Best Chef of 2015 and 2016, Guest’s expectation were high and Head Chef Rob Krawczyk and his team did not disappoint.

Based on produce from the estate’s own walled kitchen garden and polytunnels wherever possible, and supported by locally sourced produce, Rob created a unique Tasting Menu for 40 lucky diners on the night.

The evening commenced with a ‘Strawberry Bellini’ on the terrace of Brabazon Restaurant. Originally planned for the Walled Kitchen Garden, however, the weather was the only thing on the night that did not work in our favour, and so the call was made in favour of sandal and stiletto preservation.  Although, many of the guests did make the short journey to visit the garden between drops, and Nick and Mark of the Tankardstown Ground Force team were on hand to answer any questions.  

Guests then took to their seats and not before long were served their first of many courses of the night. Home-cured Charcuterie from Chef’s Smokehouse, with home-baked Breads made with flour milled at nearby Martry Mill. All dishes, served by Derek and his team, were carefully explained to guests who were intrigued by the number of elements in each dish.

Homemade Chorizo, Honey produced from our own hives, and Fennel Pollen from the garden; White Gazpacho and Rapeseed Oil; and Celeriac, Goats Cheese and Jerusalem Artichoke , made a tasty trio of amuse bouche to whet diners appetites for what was to follow.

For those who did not get to join us on the night, or those who are now absorbed by the taste experience, Brabazon Restaurant’s Tasting Menu ‘A Taste of Land and Sea’ is available every Wednesday through to Sunday.
