Homemade Scones by Kevin Dundon of Dunbrody House

My absolute favourite at any time! This mix will give you about 25 scones… 

To have light scones, make sure not to overwork the dough!

Ingredients

450 g plain flour

2 level teaspoons baking powder

100 g caster sugar

200 g butter – cold

1 egg

110 ml buttermilk

1 egg yolk with 1 tbsp of milk

Method

Preheat the oven to 160°C

Sieve the flour and baking powder together into a large bowl

Add the caster sugar and butter. Combine with your fingertips into a crumble consistency. 

Create a well in a bowl, add in the egg and pour in the buttermilk.

Quickly mix together into a soft dough. Do not overwork the dough.

Transfer the mixture onto a floured surface and flatten it out to approximately 3cm in depth.

Using a 5cm scone cutter or a glass cut out some shapes and transfer to a lined baking tray.

Make up a little egg wash by mixing 1 egg with some milk and brush this over the top of each scone. Bake for 20 minutes.

Remove from the oven and dust with icing sugar.

Serve within a day or two warmed up.
